Presenting to you a recipe to celebrate the sunny days ahead with an equally bright Mango Mirror Cake! This tropical ride of a dessert is bursting with flavours and topped with a glossy mirror glazing, the perfect pairing for a hit treat at your summer party — whether that be beside a pool or in the comfort of your own home.

  1. Two cups of self-rising flour or cake flour as they call it.
  2. A cup of granulated sugar.
  3. Half a cup of vegetable oil.
  4. Half a cup of mango puree (store-bought mango syrup also works).
  5. Two eggs at room temperature.
  6. One teaspoon of baking powder.
  7. Half teaspoon of of baking soda.
  8. A pinch of salt.
  9. One teaspoon of vanilla extract (or you can use some mango extract for some extra mango flavour)

 

For the mirror glaze:

 

  1. Half a cup of fresh mango puree.
  2. Half a cup of water
  3. Half a cup of sugar
  4. Two tablespoons of gelatin powder.
  5. Some cut-out cubes of fresh mango.

 

Instructions:

 

  1. Preheat the oven to around 180°C (350°F). Take your cake pan of choice and grease it well, or use some butter paper.
  2. Mix the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Sift them together and put them aside for now.
  3. Take a separate mixing bowl and whisk all the wet ingredients together until a smooth consistency is reached.
  4. Very gradually add the wet ingredients to the dry ingredients and beat them together until well combined.
  5. Pour the batter into the prepped cake tin from earlier and bake for a generous 30 minutes, or until a toothpick inserted into the cake comes out clean.
  6. Let your masterpiece rest for a while and cool off till you remove it from the pan.

 

While the cake is cooling, it’s time to prepare the mirror glaze:

 

  1. In a pan, combine the mango puree, water and sugar over medium heat. Let the sugar dissolve completely.
  2. Turn off the heat and bring in the gelatin mixture to the party until it is fully incorporated.
  3. Let the glaze sit for a while and cool slightly before pouring it over the cake. Spread it across the cake evenly and allow it to drip down the edges for a stunning and chic finish.
  4. Now you can choose to dig in but we would recommend to chill the cake for at least another hour for the glaze to set.
